SABRE by Mitchell Harris - the wine that started it all!

55% Chardonnay and 45% Pinot Noir from Henty, the Pyrenees and the Macedon ranges. Both tank and barrel fermented batches are carefully assembled, fermented and aged in bottle for over three years.

A dosage liqueur designed from carefully selected reserve wines adds just 4.0 g/L sugar to create a fine, complex and powerful aperitif style to be enjoyed now or over the next 5 or more years.  John Harris – Winemaker

55/45% chardonnay/pinot noir, tirage Oct '16, disgorged Dec '19, 4 g/l dosage. Winemaker John Harris learnt much from the late Dr Tony Jordan when he was a winemaker at Domaine Chandon, skills such as tightness of style and refinement of flavour. Sabre is greater than the sum of its parts - a blend of Henty, Pyrenees, Macedon Ranges - and exudes a coolness and fine line, and length of taut acidity. Smoky, toasty complexity, oyster shell, nougat mingling with almond amaretti. 95 Points
