The 2014 Sabre by Mitchell Harris continues our adventure, creating and sharing great wines from our region, with Sabre as our flagship.

85% Chardonnay and 15% Pinot Noir from the Macedon and Pyrenees ranges, brought together in the Methode Traditionelle with over three years on yeast lees and only 4g/L of sugar added at dosage to deliver a crisp yet generous aperitif style sparkling. Super fine, tight, complex and long.

Chardonnay-dominant with 15% pinot noir, most fruit coming from Macedon, 20% of chardonnay from the Pyrenees. This spent 3 years on lees, disgorged Dec 17. Finely tuned with white blossom and citrus notes, and fine bead. While there’s a smidge of complex autolysis, this is racy with the perky acidity balanced by the dosage of 4g/l of residual sugar.
