Created from Henty grown, pinot noir sparkling pressings juice from the 2015 vintage, that is usually allocated to table wine Rosé production. The wild fermenting juice was fortified half way through fermentation and matured in old French oak until early 2020.
Has approx 75+ g/L residual sugar & approx 18.5% ABV.
Drink now, on its own or with ice and soda or your favourite white spirit. Alternatively cellar for a few more years to watch the spirit and fruit transform into something even more complex & intriguing.
