Fermented and aged in French oak

Wild yeast fermented and matured in French oak hogsheads on full juice solids. The ripe grapefruit and passionfruit characteristics from the vineyard, with wild ferment struck-match, and Fumé-style reductive complexity, delivers a Sauvignon Blanc with great length, texture and zing. Extremely pale straw-yellow colour, looks just-bottled. A saline, minerally initial note to the bouquet, with sulfides and oak-spice. It's a baby; acidity and oak and cool-climate fruit still vying for position. Would love to revisit in 12 months. Loads of potential. 93 Points
